Simple Sultana Slice
Crunchy on top and chewy in the middle this sultana slice is the perfect sweet treat for the lunchbox or to enjoy with any hot cuppa.

Instructions
Preheat oven to 180℃ / 350℉ and grease a 21 x 30 cm (8 x 12 inch) baking tin.
In a large bowl stir together the sugar and melted butter.
Beat in eggs and vanilla essence.
Sift in flour and baking powder.
Add sultanas and mix well.
Spread evenly in tin and bake for 20 to 25 minutes or until golden brown.
Leave to cool for five minutes before cutting slice into 16 squares.
Notes
Cutting the slice up while it's in the baking tin will help prevent it from crumbling.
