Simple Sultana Slice

Crunchy on top and chewy in the middle this sultana slice is the perfect sweet treat for the lunchbox or to enjoy with any hot cuppa.
 
Not only does this slice taste amazing, it’s also one of the simplest recipes I know! Therefore, it’s a great choice for beginner bakers.
 
The recipe itself is one of many passed down from my Aunty who most likely acquired it from a newspaper article years ago. So it’s certainly withstood the test of time! I vividly remember when my cousin and I were younger and we were each allowed to eat one square after our weekly ballet lessons as a special treat. Of course, being children we would strategically choose the largest square with the most sultanas.   

Ingredients

In terms of ingredients, it’s really very basic. In my household, we always have a jar of sultanas on hand which means sultana slice is never far from our minds. Otherwise, you just need flour, sugar, baking powder, butter, eggs and vanilla essence. 

Steps

And the steps are just as simple. Mix butter and sugar in a large bowl, beat in eggs and vanilla essence. Then sift in flour and baking powder and finally add sultanas.

Mix well and spread out over a 21 x 30 cm baking tin. Bake at 180ºC for 20 minutes until golden brown.

Before removing slice from tin, leave to cool for five minutes and cut into 16 squares.

Ingredients
  

  • 125 grams Butter (melted)
  • 1 cup Sugar
  • 2 Eggs
  • 1/2 tsp Vanilla essence
  • cups Flour
  • tsp Baking powder
  • 1 cup Sultanas

Instructions
 

  • Preheat oven to 180℃ / 350℉ and grease a 21 x 30 cm (8 x 12 inch) baking tin.
  • In a large bowl stir together the sugar and melted butter.
  • Beat in eggs and vanilla essence.
  • Sift in flour and baking powder.
  • Add sultanas and mix well.
  • Spread evenly in tin and bake for 20 to 25 minutes or until golden brown.
  • Leave to cool for five minutes before cutting slice into 16 squares.

Notes

Cutting the slice up while it’s in the baking tin will help prevent it from crumbling.
